We don't know exactly how far back in time the roots of today's white and brown Undredalsost extend, but n ne of the unique things about Undredal is that we can talk about an unbroken tradition. Previously, each farm had its own production, except for a period in the first half of 1900 when they built and operated a joint cheese factory. Today, it is only to the manufacturer. The largest is Undredal Stølsysteri, which has production throughout the dairy season from February to October. The other is Erna and Sigbjørn Underdal Skarsbø, who run a more traditional summer beer production.
